Depending on the casino that's 4 to 6 decks. Most use a six-deck shoe, although to deter card counters at blackjack tables some casinos are starting to use EIGHT-deck shoes. Ridiculous!
What, you mean the ones that can't afford automatic continuous shufflers?
Yeah, I was gonna say. I hadn't heard of those and don't know how those things work, but I'd have been surprised if someone hadn't come up with a workable solution to card counters by now.
Easiest way to explain it is: they're these huge machines by the blackjack tables of casinos in Ontario (where they hold the equivalent of four decks). Cards go in the top after every hand, where they are shuffled back in, and the next hands are dealt out the bottom, much like with a normal shoe.

They have similar (but smaller, holding only two decks, and keeping them separate) machines for table poker games.

These are really rare in the States.
